lemon spagetti

household favourite... the kids love it

1/2 spagetti or your favourite pasta
1/4 cup butter
2 tbsp olive oil
zest and juice of one lemon
3 cloves of garlic
1 tbsp dried dill
2 tbsp chicken bouillon powder

Cook spagetti until al dente.  Meanwhile, combine remaining ingredients.  When spagetti is cooked, stir in the lemon mixture, mix well and serve!

yam and sausage hash

this has quickly became a favourite brunch in our household... yummy and different!

8 breakfast sausages, sliced into 1/2" pieces
1 large yam (sweet potato), diced
1 red pepper, diced
1 tsp ground cumin
1 tsp ground sage
4 eggs
1/2 cup shredded cheddar cheese

Fry the sausage in a frying pan over medium heat until browned; stir in the yam, red pepper and spices.  Continue to cook until the yams are softened.  At this time, in a second frying pan, cook the eggs sunny side up, making sure not to overcook (the yolks should be runny!).  Divide the hash among 4 plates, top each with an egg, and sprinkle with cheddar cheese.  Eat immediately!
